I have no idea what i'm doing with this. Anyone care to help me? My major issue is keeping count of my EV's.

My advice: use your PP as your count. If you can one hit what you're EV'ing (and you should), just use your remaining PP as a reference.

It's just so confusing... When should I feed it vitamins? How do I keep track of how much is gained each time?

Platinum. I'm starting with a Defense EV. I'm going to battle Geodudes. It has Poke Virus and it also has a Power Belt.

Ok well not for sure on plat hot-spots but it'll take me no time to find em. Geodudes are most likely 1 Def ev each. So with Power def item and pokerus 10 def evs each kill.

I keep a pen and paper and use tally marks. It's easiest for me.

So if it's 10 then... Wouldn't it go over the 255 limit eventually? Or does it not have to be exact when I end the EV?

It stops at 255. Also Vitamins give 10 each only till that ev hits 100 then they don't work.

I would do that, it's just, those are incredibly expensive.
Also, do EV's add up every time I defeat a pokemon? Or is it every time I level up?

Hotspots for Platinum:
Speed - Surfing route 227 & 228 You will only see Poliwags (1 Speed EV) and Poliwhirls (2 Speed EV)
Sp. Atk - Old Chateu There are only Ghastly (1 Sp. Atk EV)
Hp - Route 215 Lickitungs (2 Hp EV) Marrils (2 Hp EV)
Sp. Def - Surf Route 223 Tentacools (1 Sp. Def EV) Mantyke (1 Sp. Def EV).
Atk - Route 210 North Machop (1Atk EV) Machoke (2 Atk EV) Scyther (1 Atk EV) Bibarel (2 Atk EV)
All 1 EV become 10 with power item for stat along with pokerus 2 become 12.

There I added atk. You basically know def. And My post about them showing up didn't post. It is not immidiate for noticing them or them even being evident in stats. It is later in level when they'll show most.

Vitamins should always be given first. They give 10 EVs each, but you can only give them a maximum of 10 of each vitamin, for a total of 100 EVs for that stat. However, you can only give them vitamins for the first 100 of your 255 EVs for the given stat, that why you should use them first.
Either way, if you are using a power item and Pokerus, you're getting 10 for each kill on pokemon with 1 EV, so vitamins aren't really worth it unless you've got money.
You can EV train a Pokemon at any level except 100, and yes, if you give a Pokemon EV reducing berries at lvl 100, you will ruin it's stats.
